Pinwheel Chicken
Non-Veg
Pinwheel chicken is perfect as lunch, after school snack or appetizer. They taste wonderful both cold and hot.
The following serves 4 people
Ingredients:
Chicken breast – 500 gms
Paneer – 150 gms
Tomato – 4 medium
Spinach leaves – 1 bunch
Parsley leaves – 1 small bunch
Coriander leaves - 1 small bunch
Mixed herbs – 1tsp
Black pepper – 1 tbsp
Chat masala – 1 tsp
Garlic – 4-5 cloves
Onion – 2 medium
Ginger paste – 1tbsp
Green chili – 2-3
Salt – to taste
Oil – 2 tbsp
Tomato base:
Heat oil in a pan, pour in crushed tomatoes and wait till water reduces. Add mixed herbs, black pepper, crushed garlic and salt to taste. Simmer till it reaches sauce like consistency and pour it out onto your serving plate as base.
Spinach side dish:
Heat oil in pan, add chopped garlic, onion, ginger and green chilli; sauté till light brown. Add spinach leaves and stir till dry. Add salt to taste. Pour onto serving plate in any pattern.
For stuffing:
Mix grated paneer, parsley or coriander leaves, black pepper, mixed herbs and a tsp of chat masala in a bowl.
Pinwheel chicken:
Cut chicken breast into 3 thin layers. Fill the stuffing into the layers of the chicken vertically. Place the stuffed chicken on a foil paper and proceed to roll into a sausage like shape. Put the foils into boiling hot water until the chicken is cooked through. Finally, slice the stuffed chicken and place it on the plate. Add parsley as garnish and its ready to eat.
