Egg Rolls

Egg Rolls, also popularly known as Frankie or a wrap are one of the most
popular street foods in several parts of India.
The following serves 1.
Ingredients:
Egg(s) - 1
Tortilla - 1
Onions - finely chopped (1 small cup)
Cucumber – finely chopped (1 small cup)
Cabbage - finely chopped (1 cup)
Tomato Ketchup to taste
Mayonnaise - 2tbsp
Cooking Oil - 3tbsp
Green Chillies - 1 medium finely chopped
Salt to taste
Preparation:
1. Beat the egg with little salt and pepper and keep it aside.
2. Heat oil in a pan, add all the vegetables and sauté them for a few
minutes.
3. Add pepper powder and sauté at high flame till veggies are crunchy.
4. On the pan add a tbsp of oil and spread.
5. Add the beaten egg on the pan and swirl the pan to spread.
6. Place the tortilla or flatbread immediately on the egg and
press so that the egg sticks to the tortilla. Once it gets fried in low
flame for a few seconds take out the tortilla.
7. Place the cooked tortilla with egg side up and add the stuffing
to it.
8. Spread tomato ketchup and mayo.
9. Roll this tightly together.
10. Cover with a butter paper or with a foil to serve as a holder.
11. Serve hot
