Shrimp/Prawn fried rice

Shrimp/prawn fried
rice is an Asian inspired dish. It’s a healthy and low in calories but big on
flavour delicacy.
Ingredients:
Basmati Rice – 2 cups
cooked
Oil – 2 tbsp
Garlic – 5 big cloves finely
chopped
Ginger – 1 tbsp finely chopped
Green Chilli – 1 finely
chopped
Onion – 1 medium size finely
chopped
Capsicum / Green Bell
Pepper – 1/2 chopped finely
Scrambled egg - 2
Soy Sauce – 1 tsp or to
taste
Vinegar or Lemon Juice
– 1 tsp or to taste
Salt to taste
Black Pepper Powder – 1
tsp or to taste
Spring Onion – a
handful finely chopped
For Marinating Prawns:
Prawns – 12 medium size
ones
Salt to taste
Chilli Powder – 1 tsp
Vinegar or Lemon Juice
– 1 tsp or to taste
Soy Sauce – 1 tsp or to
taste
Instructions:
Take Prawns in a bowl.
Add all the ingredients given in the list and mix well. Set aside.
Heat oil in a wok or
frying pan. Add in the shrimps and cook them for 3 to 4 minutes until they get
curled and cooked. Remove and set aside.
In the same pan, add onions,
garlic, ginger, green chillies and capsicum. Sauté for a min. Now add in soy
sauce, vinegar, salt, and pepper. Add in the cooked shrimps scrambled eggs and
toss well.
Add the cooked rice and
fry for 2 minutes. Now finish with lots of spring onions. Toss once. Serve hot.
